Currencies not appearing in Purchase Transaction Grid

Please check that the Currency in question has entries in the Rates tab in Currencies. This can be found by following the below -

​Financials then System and then Currencies - select the Currency that is not appearing and select the Rates Tab. There should be a line of data with an entry for Sales Analysis and Purchase Analysis.
